MGM Springfield will welcome a new Italian concept, Costa, to the resort’s food and beverage lineup at the end of this month. The new restaurant is set to open on Feb. 28 and takes the place of Cal Mare, which will close Feb. 24.

This is the third outpost for Costa, which debuted as Osteria Costa at The Mirage Las Vegas and MGM National Harbor in 2018. The menu features housemade charcuterie and pastas, mozzarella made fresh daily, Neapolitan pizzas, grilled seafood, hearty entrees like chicken Parmigiana, and sweets like lemon ricotta cheesecake and Neapolitan cookie gelato.



The bar will offer housemade limoncellos, Italian-themed cocktails like Aperol spritzes and Negronis and a robust collection of Italian wines.

“Authentic Italian cuisine is a hallmark of our South End neighborhood in downtown Springfield,” said Anthony Caratozzolo, MGM Springfield’s vice president of hospitality. “We’re honored to celebrate those traditions and make new memories with one of our own original restaurants. In Italian, ‘abbondanza’ signifies plenty, and that’s exactly what guests will experience at Costa. From family-style antipasti to generous portions of our housemade pasta, guests will savor the abundance of our take on Italian home cooking.”

MGM Springfield opened in August 2018 with Cal Mare as its headliner restaurant, by San Francisco-based celebrity chef Michael Mina. The original menu was touted as a marriage of coastal Italian cuisine and signature New England style, highlighting fresh local seafood, housemade pastas and brick-oven pizzas.

In a statement, Caratozzolo said they made the decision to close Cal Mare based on “both MGM’s and Mina Group’s evolving business strategies to explore new culinary opportunities in 2020." Cal Mare employees will transition to Costa employees, effective Feb. 27.
